Function: Stevia is an all natural sweetener that is gaining massive interest right now. It is derived from a leaf plant native to South America. Studies have shown that it's sweetening properties result from the Stevia leaves containing 2 glycoside molecules known as steioside and rebaudioside. These are 300 times sweeter than table sugar and it's this part of the Stevia leaf that is extracted to form Ultra Stevia Extract which is effectively a purer, sweeter form of the Stevia leaf.
